Indoor Picnic

I was wanting to do something fun for dinner last night and decided since it has been so HOT and HUMID outside, we should have an indoor picnic. I spread a big quilt on the floor and covered it with a table cloth, got out bandanas for napkins, and my enamelware picnic dishes.

I fixed Barbecued Chicken Caesar Salad with homemade croutons and toasted french bread. We made s'mores in the oven for dessert (which I discovered no one in my family likes except for me). Overall, it was great fun, Emily loved the freedom, though was quite busy during the meal!
Homemade Croutons (from Better Homes & Gardens June 2001)
2 c. 1-1 1/2 inch cubes French or Italian bread
1 T. cooking oil
1 T. margarine or butter
2 large cloves garlic, minced
1 tsp dried seasoning, crushed (your choice)

Place bread cubes in a bowl. In a large skillet heat oil and margarine or butter over medium-low heat. Add garlic and desired seasoning. Cook and stir 30 seconds. Drizzle over bread cubes, tossing to coat well. Pour cubes into skillet. Cook, stirring occasionally over medium-low heat for 6-8 minutes or until cubes are lightly brown and crisp. Remove from pan. Drain on paper towels. Store tightly covered for up to 1 week. Makes about 2 cups.

David LOVES homemade french bread, but I did not make it this time - this was WW bread from the Wal-Mart bakery.
